Module A - Foundation - compulsory first module £49 + VAT plus exam fee 

Food poisoning trends, costs of poor food hygiene, benefits of good food hygiene, food poisoning symptoms and causes, food borne diseases, food poisoning bacteria, bacterial multiplication, types of food poisoning bacteria, contamination and it's prevention,, preventing bacterial growth, temperature control, food preservation and storage, time control, personal cleanliness and protective clothing, handwashing habits, infected food handlers.

Module B - Cleaning and Disinfection ........ £35 + VAT plus exam fee

Cleaning, disinfection and sterilisation stages and methods of cleaning, cleaning schedules and precautions.

Module C - Food Pests .................................. £35 + VAT plus exam fee                    

Types & problems with food pests, requirements, evidence & the prevention & control of food pests.

Module D - Premises and Equipment .......... £35 + VAT plus exam fee

Design of premises and equipment, structure and equipment, services and facilities associated with premises and equipment

Module E - Food Safety Legislation ............. £35 + VAT plus exam fee

Food Safety Act , Food Safety (General Food Hygiene) Regulations, related regulations, enforcement, due diligence defence and penalties.

Module A (9.0 am to 12.45pm) half day

Modules B and C (1.30pm to 4.45pm) half day

Modules D and E (1.30pm to 4.45pm) half day

modules booked as a half day normally £49 + VAT for the half day and £99 + VAT for a full day ( full day includes a buffet lunch). Booking by half or full day reduces the costs of modules.

     Formal Certificates issued by C.I.E.H. for modules achieved (module A must be included)
